What do our cattle eat?

Our cattle are all grass fed and spend the entire grazing season on well managed pastures living their best lives.

Standard finishing (recommended) will be on a non-GMO, no corn, no soy grain feed sourced locally.

If you want your beef finished on grass only we can accommodate this for $0.75/lb.

Why Highland beef? Is it worth the cost?

Highland beef was shown to be almost 23% more tender than commercial beef, scoring 83.27, well below the 100 which benchmarks meat as “very tender”. Compared with commercial meat, pure Highland meat contains almost 7% more protein and almost 17% more iron, averaging over 4% less cholesterol. Intramuscular fat, low in saturated fat and seen as marbling through the meat, gives Highland beef its tenderness, succulence and distinctive taste. An interesting finding was the lack of expected correlation between fat content and cholesterol levels.

Why American Aberdeen Angus?

Like all other direct to consumer cattle producers, we charge by the pound and so does the butcher. These charges are based off of the hanging weight of a carcass. With American Aberdeen Angus AKA Low line Angus, AA here on out. AA carcasses are significantly smaller while not producing significantly less meat this is achieved through selective breeding, AA achieve a useable cut percentage of around 75% of the hanging weight vs the typical 60% for commercial angus cattle. Why is this important? You’re spending less of your hard earned money on unusable wasted parts of the animal. Not even our Highlands achieve this level of carcass usability.
